Happ (healthy and pure products) was established in Luxembourg-Limpertsberg as a restaurant serving additive-free, clean food to change attitudes around healthy eating and show it can be tasty and improve energy levels.

Almost eight years on, the ladies behind Happ have launched their first recipe book, “HaPP--Healthy & Pure”. Kristjana Steingrimsdottir explains.

Jess Bauldry: Can you describe the cookbook and where the idea for it came from?

Jana Steingrímsdóttir: The idea and the purpose of the book is to share with our clients and those who are interested in healthy lifestyle some recipes that are nutritious, delicious and easy to make at home. It´s packed full of beautifully illustrated recipes many of whom are a part of our menu at the restaurant. The book is our token of appreciation to all Happ clients.

The Happ book has over 100 recipes, the book contains a variety of dishes such as breakfasts, soups, salads, and desserts. Even though most of the recipes are both vegan and gluten-free we add suggestions for those who want to have fish or meat, so this book should cater to everyone.

JB: What are your 3 favourite recipes and why?

JS: This is a difficult question, since I think I put all of my favourite recipes in the book and when I browse through it is difficult to choose only 3, but I would say that the creamy vegetable soup, citrus beet salad with creamy avocado lime dressing with our popular falafel and raw avocado lime cake are some of my favourites. I have been serving these since the beginning of opening Happ and it seems that almost everybody that tries these, loves them as much as I do. The bold colours and the taste of each of these dishes are just awesome and it does not spoil that it is bursting with flavours and fantastic nutrition.

JB: What are the next trends in healthy eating and living that Happ plans to embrace?

JS: I think the next “trends” are that people are becoming more and more aware of what food does to their health and in the coming year the focus will really shift and the main focus will be to eat as fresh and clean as you can and stay away from processed and packaged food.

We will continue to serve our clients like we have been doing for the past almost 8 years. We value our clients’ opinions and we do listen to their needs and wants. We have a great variety of gluten-free products, cakes, crakes, salads and soups. One can always have a vegan and vegetarian option and our clients know that we put together our meals with a variety of ingredients and love to make them satisfied and happy.

We are always thinking of being as eco-friendly as possible, we do try as much as we can to shop locally and seasonally, we are constantly working on recycling and food waste and we will continue to so as well as for our packaging.
