For each ingredient, he and his team push the boundaries of their imagination by experimenting with multiple textures. Everything is homemade, blending French expertise and technique with Asian influences. The chef also keeps his Belgian roots alive, preserving traditions like the early-year sauerkraut.
Having worked in renowned establishments in Luxembourg and Belgium, he ensures that the menu aligns with the seasons, featuring as many organic and locally sourced products from Luxembourg and the Greater Region as possible. He commits to avoiding endangered species and pays particular attention to allergens.
The seasonal menu evolves over time to innovate while providing comfort. For a starter, there’s nothing like Scottish salmon tartare prepared like ceviche, accompanied by fennel served in velvety, confit, and crunchy textures—a light and refreshing beginning! For the main course, indulge in a Luxembourgish classic: “bouchée à la reine.” Served with seasonal mushrooms and perfectly crispy fries, the meat practically melts in your mouth. In harmony with the chef’s cuisine, the restaurant offers a selection of local and international wines, available by the bottle or glass.
