The style will remain “identical”, Sébastien Sarra said in an interview, “because I think everyone wants to find the Brasserie Guillaume as it was.”

Speaking about his staff, Sarra stated:

“The message that I want to convey is that we are all united. You know, most of the 50 employees have been here for 20 years or more. The Brasserie Guillaume is their house.”

Sarra said he was surprised by the outpouring of support from the general public, both native Luxembourgers and international residents.

Charles Munchen--who co-founded the restaurant but later sold his stake to Sarra--added that Lydie Polfer, Luxembourg City’s mayor, had visited on Tuesday to show her support.

Munchen lives in an apartment above the restaurant, which he had to evacuate while firefighters battled the blaze, but his flat did not suffer serious damage.

The fire is believed to have started in the cellar and spread through extractor shafts.
